Top Asparagus ‘Tips’

Baked asparagus tips

After picking up a bunch of Asparagus I was determined to find a way to give these little green spears a bit more piquant punch, and they have now become one of my favourite veg sides.

I love baking them with olive oil, wholegrain mustard, lemon juice and garlic. They take no time at all to bake and taste amazing.

They absorb so much of the other ingredients' flavour too.

Once I looked into this lovely little veg I was amazed by how much of a powerhouse and superfood it really is!

It's packed with minerals and vitamins such as A, C, E, K and B6 as well as iron, copper, protein, calcium and fibre.

As a great source of Vitamin E, it helps to strengthen your immune system, which is exactly the opposite effect sugar has.

But that is just the start, this super veg has so many other health benefits, you wouldn't;t believe some of them!

It's full of antioxidants which can help your body fight damaging free radicals and fend off cancer.

Although it might make you wee smell a bit funny, asparagus is actually great for your urinary tract because the high levels of asparagine it contains are a natural diuretic, and the more you go to the loo, the more bad bacteria you flush out of your system.

And would you believe that the minerals and amino acids asparagus can also help you get over a hangover!?

So whenever this little green is in season, grab yourself a bunch and throw it in the oven - it's so simple to make and I'll never not make a roast with this little side again!

INGREDIENTS

250 gm Asparagus

4 x Garlic Cloves

Juice of 1 x Lemon

tbsp Whole Grain Mustard

Glug of Olive Oil

Pinch of Salt

METHOD

In a jug mix the lemon juice, glug of oil, mustard and mix together.

Lay the asparagus on greased baking paper and season.

Pour the lemon mixture over the asparagus.

Slice the garlic and mix in with the asparagus.

Pop in the oven for 15 minutes on 200 heat.
