The Best Basil Pesto

Sugar free basil pesto

This is so easy to make and keeps well in the fridge too.

There's nothing tastier than fresh pesto and its such a versatile little ditty - perfect as a pasta sauce, lovely with fish, with chicken, as a dip, as an alternative pizza base or drizzled over salad.

Pesto is a proper kitchen hero and you might have gathered, I'm a fan.

Basil is a super healthy herb, and it's extracted oil is one of the most important medical herbs around.

It is an anti-oxidant, it fights cancer, it protects the liver and is an immune booster - the exact opposite of sugar, which has been shown to have all types of negative effects on your health which I have written about here in my blog post 17 Amazing Things That Happen When You Stop Eating Sugar.


And as much as I love eating pesto, making it is just as good too.

It's such a rustic dish that combines some of the biggest flavours in cooking.

The smell of basil is so fragrant it makes you feel great before you even taste it, and with the creaminess of the grated parmesan and pine nuts and the garlic kick, it's hardly surprising that its so popular.

The recipe below is super simple and quick to make and of course absolutely delicious!

INGREDIENTS

50g pine nuts

80g basil

2 Garlic Cloves

50g parmesan 150ml olive oil

METHOD

Lightly toast the pine nuts in a frying pan, then add it to a food processor with the parmesan, basil, garlic, olive oil and whizz until smooth consistency and season to taste.
