Nutty Chocolate Puffed Quinoa Squares

These are truly scrumptious and are the perfect texture of both gooeyness & crunchyness. Aside from tasting incredible these are a great healthy treat in every sense of the word.


They’re a mix of with protein, fibre, healthy fats and also contain magnesium rich cacao.


I’m not one for adding syrups because they can still spike blood sugar levels. So these have been sweetened with dates that are rich in fibre and contain a plethora of antioxidants. The dates also lend structure and help the mix clump together and make it more mailable.


I used peanut butter but this could be swapped out for any other nut butter or seed butter.


Nutty Chocolate Puffed Quinoa Squares CLOSE UP

Hope you enjoy! INGREDIENTS 1/2 cup of cashew nuts (soaked) 1/4 cup mixed seeds 1/2 cup puffed quinoa 1 tbsp vanilla 3 heaped tbsp peanut butter 10 soft dates Pinch of salt 6 dates whizzed to a paste, Cacao powder Vanilla 1 tbsp melted coconut oil.

METHOD To start, drain the cashews and add them to the mixer along with all the other ingredients except for the puffed quinoa. Whizz together until a sticky mass forms. Then add the puffed quinoa and pulse so they’re combined. Then transfer the dough to a lined tin and flatten out so it’s about 1 cm thick. For the chocolate topping - soak the dates in boiling water, then drain them (reserving a tbsp of the water). Pop them in a blender and whizz until a smooth paste. Then add the melted coconut oil and cacao powder and mix until a nice runny smooth consistency. Then pour over the nutty quinoa mix. Add little blobs of PB and stir in to the chocolate. Pop in the fridge to set for 30 mins.
