Sweet potato mash

If you read my blog you'll probably realise how in love I am with sweet potato.

It's such an adaptable little tuber but interestingly becomes more 'sugary' depending on how you cook it.

Boiled sweet potato has a much lower sugar content than baked sweet potato!

When we think boiled it can sound so bland, but this is where the Sweet Tatty comes in to its own... boiled and mashed with butter, a splash of cream, a pinch of salt and a grating of nutmeg and you have a delectable feast from in the form of this yummy root veg.

A side of Sweet Potato mash pimps up any dish and adds a whole new realm of flavour.

INGREDIENTS

1 Sweet potato per person

A Generous knob of butter (optional)

Splash of Cream (optional)

1/2tsp Grated Nutmeg

METHOD

Peel and chop the potato and add to boiling, salted water.

Boil for 15 minutes and then mash.

Serve with a knob of butter, splash of cream and grated nutmeg, mashed together.
