Sweet Potato Rosti

Breakfast can be a dangerous time for sugar intake.

Most packaged cereals are loaded with sugar, and once you add in an orange juice you could be way over your daily recommended sugar allowance before you leave the house!

Once you break your sugar addiction, you can make sensible eating choices like this scrumptious breakfast - filling, tasty, bursting with flavour, nutritious and easy to make.

Crunchy sweet potato rosti, succulent avocado, and a gooey poached egg topped off with chilli flakes to give your morning a kick!

This Rosti recipe is a twist on the old Irish recipe, using sweet potatoes instead of normal high sugar white spuds!

This recipe ticks all the boxes, filling, healthy carbs, packed with veg, high in protein and good fats!

Perfect for a post work out brunch too.

So quit the breakfasts loaded with sugar and get stuck into this mini feast!

INGREDIENTS

1 Sweet potato

1 Ripened Avocado

1 Clove of Garlic

1 Large Freerange Egg

1/2 Lime

1 Tbsp Olive Oil

Chilli flakes

Pinch of Salt & Pepper

knob of butter/coconut oil

METHOD

Peel and grate the sweet potato, heap it on to a clean tea towel, roll it up and grab each end of the tea towel and ring out any water from the sweet potato.

Remove from the tea towel and add to a mixing bowl.

Beat and add the free range egg to the mixing bowl, season well and mix together.

Peel and scoop out the avocado flesh, discarding the stone, place in a separate bowl.

Crush the garlic clove and add to the avocado, halve and squeeze the lime in to the mix and add the chilli flakes.

Mash it all together

Heat the knob butter/coconut oil in a frying pan.

Portion the sweet potato rosti mixture in to palm sized batches.

Place them on the melted butter and press down with a fork to flatten the mixture.

Mean while in another pan, heat water and bring to the boil, when bubbling gently swirl the water and crack in the egg to poach for 3-5 mins depending on if you like your egg runny or not.

Turn the rosti over so they can brown nicely on both sides.

When browned, place the rosti on to a plate, top with the mashed avocado mixture and place the poached egg on top.

Sprinkle with chilli flakes for an extra kick!
