Mango & Passion Fruit Cheese Cake

Delicious. Nothing more needs to be said š (Apart from hereās what you need to make it!)
INGREDIENTS
-2 mangos (I used half frozen from @bunalunorganic)
- 2 passion fruit
- 400g mascarpone (swap for coconut cream if V)
- 1 12g gelatine sachet (swap for agar agar if V)
- 2 cups of mixed nuts & hemp seeds
- 1 tbsp butter / coconut oil
- 1 tsp vanilla
- 1 tsp ginger powder
- pinch salt
METHOD
Toast the nuts and hemp in the butter, add the vanilla, ginger and salt.
When lightly toasted add them to a processor and blend in to a course powder.
Pour in to a lined tin.
Press down evenly and pop in the fridge to set.
Next blend the mango until a smoothie consistency and pour in to a saucepan and add the gelatine. Follow packet instructions for gelatine.
Then take off the heat, leave it long enough to cool off but not to set, then fold in the mascarpone until weāll combined.
Pour the mango mixture over the base, top with passion fruit and leave in the fridge to set.
