Buttery Apples & Whipped Vanilla Cream

One of my pet hates is food waste and when my daughter first left home for uni, I noticed there was quite a lot of left over fruit & veggies. Left over bananas are easy to get rid of because everyone loves a banana bread and they're perfect fro freezing too. Apples, are great for naturally sweetening homemade jam & chutneys, but sometimes that's a lot of effort. Here is a recipe that uses up your wrinkly apples perfectly well, takes minutes & makes the perfect lo-carb dessert...


Boozy Buttery Apples with Whipped Vanilla Cream is my new favourite way to use up apples past their best. NB the boozy part is optional!

Ready in minutes, you can serve this as is sprinkled with pecans or other nuts, or load up a thick, creamy porridge to make your breakfast ultra extra.


Buttery Apples & Whipped Vanilla Cream

Ingredients


20g Butter

1/2 tsp cinnamon

splash/1 x tbsp of whiskey (or more if that's your mood! Or not is equally as tasty)

2 x apples

60g cream

1/2 vanilla

1/4 tsp cinnamon


Method

1. Slice up the apples.

2. heat your butter in the pan, when melted add the apples and fry until golden.

3. Add the cinnamon and vanilla to the cream and whisk.

4. If adding Whiskey, add to the pan and cook off for 30 seconds or so.

5. plate up the apples and serve with a dollop of cream.
