Chocolate Fudge Brownie Fingers

Think fudge brownies and nutty, chocolate praline and you’re close to what these little ditties taste like.


I'm feeling pretty smug over here after whipping up this creation because they taste so delicious (yes, I know self-praise is no praise, but seriously when you’re sat eating these, wait for the smug feels too!).  


This recipe is hard proof that you can eat treats that can be both healthy and tasty. Sometimes our bodies just crave ‘something nice’ and its at these times that were most susceptible to making bad food choices and succumbing to the influence of the confectionary multi million pound marketing.  


The next time you feel like something nice, reward yourself with these nutrient loaded, utterly delicious fudgy chocolate brownie fingers…they really do give a whole new meaning to 'Being good to yourself’ and ‘Treat’.


All the ingredients are real, whole food, health boosting ingredients - no nasties, no refined sugars or syrups. Just good honest ingredients.


The only recommendation is - make plenty and keep them stored in the fridge because you WILL want more.  


INGREDIENTS

12 dates - soaked for 10 mins to soften

1 tbsp vanilla

2 tbsp melted coconut

1 heaped tbsp cocoa

1/2 tsp salt


Blend together into a paste


The add...


1 cup of cashew & hazelnuts

1tsp ground ginger

1tbsp cinnamon


Mix together in processor until combined.

It should be a squidgy texture that holds.


Finally, add...


Add 1/2 cup sunflower seeds

1 tbsp dedicated coconut

1 tbsp ground flax

2 tbsp chia


Whiz together again.


Remove the mixture and using parchment paper or a silicone sheet, roll the mixture in to a long rectangle shape. It squidgy but mailable.  When it’s been shaped, pop it in to the fridge to set for an hour.


Remove from the fridge and cut in to slices and add melted sugar free chocolate and leave to set in the fridge again. Or you can go Nude and eat them as they are without the chocolate.
