Apple & Pear Oat Base Tart

This Apple & Pear Oat Base Tart served warm with Vanilla Icecream is comfort food at its best, tastes so good and is full of health boosting ingredients.


Baked apples & pears with cinnamon & mixed spice bring wonderful vibes to your kitchen and makes the house smell divine!


Apples & pears are great for gut health. They reduce inflammation and may help with IBS & diverticulitis symptoms. Pears are one the best sources of dietary fibre, they can also help with water retention & bloating.


Both fruits contain pectin which increases digestive health and can help lower cholesterol. They also provide plenty of antioxidants, minerals & vitamins. As if you needed an excuse to tuck in to an Apple & pear tart...now you have plenty!


This recipe is a great way to use up any apples & pears gone past their best as they’re perfect for stewing.


Apple & Pear Oat Base Tart

INGREDIENTS


BASE

  • 2 cups of GF oats

  • 6 soft dates,

  • handful of walnuts,

  • 1 tablespoon chia seeds,

  • 1 tablespoon vanilla,

  • 1 tablespoon melted coconut oil (or butter),

  • pinch of salt

  • splash of oat milk


TOPPING

  • 4 red apples

  • 2 pears

  • cinnamon

  • mixed spice


METHOD

  • Blend all the ingredients for the base together.

  • Use a splash of oat milk to loosen slightly

  • When whizzed, pour in to a baking tin, squish it down with a big spoon.

  • In a pan stew 2 apples and 2 pears and add in cinnamon and spice to taste.

  • Add the stewed apples to the base.

  • Slice remaining 2 apples thinly and add lay them over the stewed apples.

  • Drizzle with water & pop in the oven on 180 for 20/25 mins.


For an added treat serve with vanilla ice cream (made with coconut cream, banana & vanilla bean paste all whizzed together & frozen until ready to serve).


This is a tart that can be eaten ANY time of day full of good honest ingredients that taste gorgeous & comforting .
