Scrambled egg with Salmon and avocado

This colossus of a healthy breakfast is so easy to prepare and is delicious too.

Smoked salmon is a great source of protein and contains B Complex vitamins, vitamin D, magnesium and selenium as well as containing heart-healthy monounsaturated fats.

Avocado is jam packed with beneficial monounsaturated fats, lots of vitamin E , potassium, folate, B-Complex vitamins and vitamin C. Great for blood pressure.

Eggs are a great way for getting your protein fix from the get go in the morning and then adding alkalising lemon to the salmon and avocado gives an added boost of vitamin C too.

INGREDIENTS

50 gm smoked salmon

2 x eggs

1/2 avocado

splash of full fat milk (optional)

1/2 lemon

pinch salt & pepper

knob of butter

chopped spring onions

METHOD

Peel the avocado and remove the stone, cut into slices lengthways.

Plate up the salmon, and add the avocado to the plate.

In a pan melt the butter.

Crack the two eggs in to a jug/bowl and whisk together, add a sprinkle of salt and pepper and a splash of milk. Pour in the the pan with the melted butter and stir with a spatula as the eggs become fluffy.

Serve on the plate with the avocado and salmon.

Sprinkle on the spring onions, squeeze the lemon over and enjoy!
